Create an Elegant, but Easy Cheese and Meat Board in Minutes

Updated October 22, 2025: A trip to Italy in 2015 inspired me to embrace simple entertaining. This post was originally written in 2019 for Halloween. Since then, these Italian-influenced appetizers have been my go-to for numerous gatherings. 

My neighbor loves Halloween so much that she coordinated a progressive fall-inspired dinner party for our street. I volunteered to host appetizers. My goal was to keep it simple and look to Italy and Spain for inspiration for an elegant, yet easy, cheese and meat board that could be put together in minutes. 

In 2015, I went on a press trip to a winery in the Marche region of Italy. The event set-up was simple, elegant, and perfect for tapas before a meal. I decided to do something similar with my own spin for this neighborhood get-together.

Liza loves Disney's Descendants movies. Last year, she knew she wanted to be the character, Mal, for Halloween. In my house, the song "Ways to Be Wicked" is continuously played. I decided to have a little fun with a "Ways to be Wicked" song. The lyrics say,

Take a bite, c'mon, be bold

Descendants. Apples. Villians. Evil Queen. It all fell into place.

I used fresh apples for my centerpiece decorations, and the fall fruit is in season right now. An apple, from tart to sweet, pairs wonderfully with an Italian-inspired meat-and-cheese board.

I ordered apples from my Papa Spud's produce box delivery service. Apples were in abundance and cost-effective. I purchased everything else from Trader Joe's in less than an hour.

Several types of crackers
Goat Cheese with Herbs
A Spanish Cheese sampler with Manchego, Iberico, and Cabra Al Vino
Sliced Aged Cheddar Cheese
Two varieties of pears (One sweet and one standard pear)
Several cartons of the store's seasonal Greek Yogurt called "Trader Joe's Apple-Caramel Whole Milk Greek Yogurt." 
Dried Apricots
Organic Trek Mix with Cashews, Almonds, and dried Cranberries
Italian Hard Salami 
Two appetizer snack packs with Genoa salami cut into apple shapes and provolone slices.

I have two cheese boards that are simple and look like cutting boards. I also used three small glass dishes to hold olives, nuts in a trek mix, and dried apricots.

I placed the four kinds of cheese first. I used the goat cheese on another platter separately with crackers, pears, and apples. For my hard cheese platter, I placed my nut bowl and my dried apricot bowl on the board. I put a few sliced apples on the tray, along with crackers and red grapes for garnish. Presto. The cheese board was filled in no time. 

On a round cheese board, I placed a bowl of olives in the middle. I then surrounded the olives with crackers, cheese, Genoa salami, and hard salami slices. 

For my third platter, I took the olive oil appetizer breadsticks and wrapped Prosciutto around each one. I used apples and grapes for garnish.

I was amazed at how quickly I was able to create this elegant yet simple cheese-and-meat tray for this party. The total time may have been 15 minutes for all three trays. 

I used the Apple-Caramel Greek yogurt dip with apple slices. 

This was a no-fuss party idea, and I will do it again. It didn't take much work, but it looked like it did. The hit of the night was the yogurt dip and the soft goat cheese. It all worked well because I had meat-eaters and vegetarians in attendance. 

Another neighbor served lasagna after my get-together, and my other neighbor served a homemade limoncello cake. It was a great night.

The Oldest Restaurant in Grindlewald, Switzerland Makes You Crave Swiss Macaroni with Meat Sauce dotted with Applesauce

No doubt, the best things in life are usually unplanned. Typically, many things I do on vacations aside from confirming lodging, train, and airline tickets are unplanned. That's how my family of four spent our vacation in Switzerland this summer.

I remember our last night in the charming alpine village of Grindelwald, scrolling through Google reviews in our hotel suite at Hotel Spindle, searching for dinner ideas. Let's put the last night in a town after eating three restaurant meals a day for eight days in a row in some perspective for you. 


Food in Switzerland is quite expensive compared to restaurants in North Carolina. Entrees above $30 are what I consider high-end restaurant fare. In Switzerland, a McDonald's meal deal, which includes a quarter-pounder, fries, and a drink, costs 25 Swiss francs. That's about $30 in U.S. dollars. Once you visit a McDonald's in Switzerland, you gain a whole new appreciation for its trendy cafes and local, sustainable ingredients. 


Fondue may be the Swiss national dish, but the country has been influenced by both Italian and German cuisine with its own twists. The brown gravy and onions over a bratwurst, instead of a side of mustard and sauerkraut. The fabulous tangy German salad that I could eat by the gallon is also missing in Switzerland, and is instead replaced with Rösti, a pan-fried potato pancake. 


By night nine, a family can be a little disgruntled and tired of too much togetherness, no matter how much we love each other. My daughter misses a bagel at Starbucks, my husband is tired of paying for food, and my son, well, he doesn't want a repeat restaurant or lunch-type sandwiches for dinner. He and I are usually tasked with the food searches. He is browsing in his bedroom, and I am generally browsing from my bed. Occasionally, we will yell, "How about this place?"

That's what happened on the night we went to the oldest restaurant in Grindlewald.






THE PINTE RESTAURANT 


I had admired the Pinte Restaurant building for several days while in Grindelwald and even took photos on my first day in the village because the building is so quintessentially alpine with its green shutters, gingerbread molding, and window flower boxes. It was less than a block or two from our hotel, so we passed by it frequently. 


We did not have reservations, but it's recommended that you make them. We got lucky as walk-ins, and we were seated at the very table next to the front door that you see in all the marketing photos. Fondue is only served outside. The inside of the restaurant is as charming as its exterior.

The menu is entirely in German, with only a few English words described for each dish. It's such an authentic Swiss menu that we asked numerous questions and even had dishes verbally translated as accurately as possible.

I chose a macaroni pasta with a bolognese sauce served with applesauce. The traditional name is Ghackets Mit Hornli. The server described it to me as minced meat with pasta in a conventional bolognese-type sauce with applesauce. The applesauce is served on the side, but I dotted some on top of mine. I likely did not eat the dish as intended, but regardless, it was one of my favorite meals during my time in Switzerland. I want to create the dish at home. This recipe for Ghackets Mit Hornli is similar to what I had in Grindlewald.  



PLAN YOUR TRIP to GRINDELWALD, SWITZERLAND

My husband and son are big fans of The Lord of the Rings Trilogy. I've seen one movie. We'll leave it at that, but when we were planning this trip, he mentioned that the Lauterburnnen Valley area was the inspiration for J.R.R. Tolkien's novel for the elves' home. We decided to put this area on our list of places to explore while in Switzerland.  When visitors visit this area, they tend to stay in one of four places: Lauterbrunnen, Wengen, Murren, and Grindelwald. We visited all, but Murren, which is a Rick Steves' favorite destination. Interlaken is the gateway to these destinations. Many tourists also stay there because it allows them to travel in many directions within the country with ease. When I travel, I prefer to dive deeper and stay in the surroundings I want to explore, rather than taking longer day trips. Grindlewald. I am so glad I chose Grindelwald because it turned out to be one of my favorite villages. It's larger than the other villages, and the hotels in the area met my expectations, which are relatively high for an affordable cost. The location, look, decor, food, and amenities must all fall into place. For our Grindlewald hotel, we chose Hotel Spinne, and we thoroughly enjoyed our stay there.

Reunion Food: Southern Shoe Peg Corn Salad

There are many versions of this salad on the internet, but this one is a favorite. We have a "Christmas in June" family reunion this weekend.   That's right! I said, "Christmas!"  Each year, we gather with my husband's extended family, whom we do not see during the regular holiday. We play outdoors, eat a fabulous, casual Southern meal, and give the kids Christmas gifts.

My kids love it. Both of my children have birthdays close to Christmas, so by June, they really look forward to getting new things. Honestly, it's just a fun time to get together.

We've been doing this little celebration for about 9 years now. I typically bring a new dish to the event, but this year I'm going with an old favorite at my mother-in-law's request. She likes my Shoe Peg Corn Salad.

It really is good. However, I'll tell you right now that it contains half a cup of sugar. So, how could it not be good?

It's best to plan for the day ahead. Try it. You should take it to your next family reunion.

Southern Shoe Peg Corn Salad

2 (16-ounce) cans of shoepeg corn, drained (I've also used sweet yellow corn as the picture depicts)
1 (2-ounce) jar chopped pimientos, drained 
1/2 cup chopped green bell pepper
1/2 cup chopped green onions
2 stalks of celery, chopped
1/2 cup sugar
1/2 cup vegetable oil or olive oil
1/2 cup vinegar
1 teaspoon salt
1/2 teaspoon black pepper


Mix together corn, pimientos, green pepper, onion, and celery.
Combine the remaining ingredients in a small bowl, and pour over the vegetables. Cover and chill overnight. Drain vegetables well before serving.

I've been a fan of clean beauty since 2016. I started researching the EWG site and paying attention to the ingredients in beauty products. 

I primarily buy products in my beauty routine from three places now:




Counter, formerly known as Beautycounter, was my first introduction to clean beauty in 2016. I like many of their products and was very sad when Beautycounter closed its doors to the public. But, sometimes change is good, and I forced myself to seek out and try other beauty brands.

This spring, I tried a skin tint by the waterless beauty company Olive Rose. After my trip to France last year, I searched for skincare and cosmetics that are good for your skin. I love this product so much now, and I use a darker shade as bronzer.  This is a German-based company, and one of the first waterless beauty companies on the market. Oliveda uses an extract from the olive oil leaf instead of water. It enhances the products' potency and contributes significantly to sustainability.  One of the best things you can do when you go to this website is to take the Brain Quiz. It recommends products tailored to your specific skincare needs. 



Can Oliveda Softening Foot Balm Transform Cracked Heels? My Personal Experience Revealed

On a whim this spring, I purchased Oliveda B20 Softening Foot Balm when I reordered my daily facial moisturizer. First off, no one really likes to talk about feet, especially how unattractive their own feet may look compared to others'. I'm going to spare you from looking at my feet, but sometimes I have wondered if an alligator has softer feet than I do. I have always had dry, cracked heels, as well as calloused areas on my feet. I've purchased many products over the years, and for some reason, I stopped using them or didn't see the results I expected.

When the Oliveda B20 Softening Foot Balm arrived, I immediately liked the bottle because it featured a pump-style dispenser. I've been very inconsistent with hand, foot, and body cream over the years, but I have found that I am more likely to use lotion if it sits on my counter, and I just have to get a few pumps rather than picking up the bottle, opening the bottle then squirting lotion out. This means that the Oliveda bottle was more likely to be used by me, but I still wasn't expecting much, as I have stated, having tried numerous products with minimal benefit. ( I even bought Gold Bond Diabetic Foot Cream, thinking it would help. It didn't)

Oliveda is a waterless beauty company where the water used in products is replaced with a natural olive oil elixer pressed from olive leaves, which provides a more potent formula without the need for harsh preservatives. I like the smell, and it doesn't feel greasy on my feet. I can't stand to feel greasy. When I first used the product, I thought it made a difference, but it wasn't until a few days later that my husband noticed and immediately said, 'Your feet seem softer than they used to be.' I was like, 'You are right, and here is why. I credit the new Oliveda foot balm I bought." 

The only con is the price, which is around $45 retail.  You may be hesitant to purchase because it is priced considerably higher than what you can find at the drugstore or even Sephora. When comparing to spa products and high-end beauty product lines, it is significantly less because you are not paying for that LeMer or Chanel name. This balm is over 8 ounces in quantity and requires only a small amount at each use. I use it a couple of times a week, or whenever I remember. In 56 years, my feet have never felt softer. I am a true fan of this product and will likely purchase a body balm or body cream next. I have my eye on the B16 Cell Active Body Serum to try in July after my summer vacation.

If you were a fan of the Beautycounter brand like me, you probably felt lost in 2024 because you could no longer buy some of your favorite clean beauty products online. Dior Forever Natural Foundation: I have been using this powder foundation for several years and have made it my go-to powder. It's perfect for those early-morning cheer comps with some mascara. 

Dior 4-D Lash Primer: Beautycounter has never sold a lash primer, but my lashes need one. I have used this primer for the past five years. 

Kosas 10-Second Eye:  I love this liquid eye shadow by Kosas. I've also tried Glossier, but I prefer the Kosas brand. It's affordable and so easy to use. 

Summer Fridays Lip Butter Balm: My teenage daughter bought this first, and the great thing about having a teenage daughter is that sometimes you learn about things the younger generation likes. I used the tinted sheer in the shade 2.5 skin before my daughter discovered the brand, but she hooked me on lip butter balm. 

Summer Fridays ShadeDrops Mineral Milk 30 SPF: This sunscreen is fantastic. It's lightweight and doesn't cause a breakout in my chin area, unlike the Goop brand. I highly recommend this brand for sunscreen. 

Oliveda Corrective Eye Elixir: After my summer trip to France, I started researching some European skincare to replace Beautycounter, which I had used exclusively for skincare since 2016. I am still trying different products, but their Corrective Eye Elixir has helped reduce the appearance of fine lines. I told a friend recently that I believe 55 is a time in a woman's life when age creeps up on you in the face. I love to order the lower-carb Avocado Benedict for breakfast on the Famous Toastery Menu. 

I eat a lot of avocados, including avocado toast. It's the one that this Gen X'er loves, brought to you by millennials.  An extended family member told me that she loved to slice an avocado, put it on a rice cake, sprinkle salt, pepper, and fresh lemon on top. It's an alternative to avocado toast. Avocados are great with eggs.

I buy a lot more avocados these days because they have become my go-to item for breakfast, lunch, or snacks.

Avocados are also great on cheese melts with tomato. The local Raleigh-area restaurant, Famous Toastery, has a signature sandwich called the Left Coast B.L.T., featuring bacon, lettuce, tomato, brie, avocado, and pesto mayo on whole wheat toasted bread. I love it and order it almost every time I dine there, unless I get the Avocado Benedict, which is the photo I shared above. The Famous Toastery restaurant franchise is North Carolina-born and bred, with over 40 locations in the Eastern United States.

Avocados are considered a superfood. The California Avocado Commission (CAC) has all the nutritional facts laid out for you. It's a sign of relief in good fats, vitamins, and minerals, and is heart-friendly. It's also a great staple for a vegetarian diet.

My husband tells me that he doesn't like avocados, but he does like guacamole. What? That makes no sense. It's like the same thing to me. Everyone eats guacamole on Cinco de Mayo or at a Mexican restaurant, but I've found a great twist on regular avocado dips that you may enjoy.

Ingredients
 2 scallions, cut into 4 pieces each
 2 ripe, fresh California Avocados*, seeded, peeled and quartered
 1/4 cup nonfat Greek yogurt
 2 Tbsp. grated Parmesan cheese 
 1 Tbsp. And 1 tsp. fresh lemon juice
 1 Tbsp. And 1 tsp. Reduced-sodium soy sauce
 1/2 tsp. garlic powder
 1/4 tsp. freshly ground black pepper
 1 (10-oz.) package frozen chopped spinach, thawed, moisture squeezed out well

Instructions 1. Place scallions in a food processor and blend until finely chopped. 2. Add the avocados, yogurt, Parmesan cheese, lemon juice, soy sauce, garlic powder, and pepper, and puree until smooth. 3. A pinch and pulse just until incorporated. 4. For optimal taste, refrigerate for a few hours before serving.

Let avocados be a canvas for any meal you have. Some days, I just have a little fun and make my toast have a face.

Waterless Beauty: How does it Work?

I already knew that I prefer purchasing clean beauty products, but what I didn't realize is that I would like waterless beauty products. I've looked at beauty product ingredients for years. I never thought much about water as an ingredient because we know water is not harmful. Late last year, many magazines predicted that waterless beauty would be the new trend for 2025. Huh?  This article explains the reason why beauty consumers are going dry. 



Well, I'm 56 years old, and I don't give a flip about trends, but it piqued my curiosity. Let's sum it up quickly. Waterless beauty products require little or no preservatives, unlike traditional beauty products that often contain water. Not diluting with water makes the product more potent and more sustainable to the planet. Waterless beauty companies replace water with oils, butters, waxes, and oil-soluble actives. 

The waterless anti-aging face cream from Oliveda, which I've been using since September, replaces water with properties derived from olive oil. It's been just shy of seven months on my counter, and it's so concentrated that I hit the halfway mark of the jar this morning. It's either half-full or half-empty. You decide, but it's an essential detail because this cream doesn't have drug store prices, but it's not over-the-top expensive either. I've been using it regularly every morning and sometimes at night.

The skincare need test is interactive, suggesting products based on your input. 



After you take the test, it will recommend certain products. One of the main products it recommended I haven't tried yet. At the time I purchased it, I was looking for a lightweight moisturizer, and I took a chance on it, and I liked it. I have since bought a few other products, which I will share with you later, as that's a story for another blog post.

Ann Street Decadent Brownie Recipe from Beaufort, N.C. for the Ultimate Chocolate Lover

Sitting at my desk, I go through blog posts from my early days of hosting a website.  I stumbled upon a fabulous Brownie recipe from St. Paul's Episcopal Church in Beaufort, NC.  I originally published the recipe in 2011 and felt it would be great to repost for 2025.  The brownies are great to take to summer picnics.

North Carolina's historic Ann Street is one of my favorite streets in Beaufort.  It runs parallel to Front Street which is located on the waterfront.  Ann Street is home to most of the churches in the town and is the most stately residential street in the historic town with rows of beautiful trees.  St. Paul's Episcopal Church hosts a great luncheon during the town's Old Homes and Garden Tour in June.
St. Paul's Episcopal Church used to host a  luncheon during the town's Old Homes and Garden Tour in June.  On one of my past trips to Beaufort, I purchased the church's cookbook, "Let Us Keep the Feast in Historic Beaufort."  It is a favorite cookbook of mine, and yes, it drives my husband nuts, but I still keep a lot of vintage cookbooks. 
 

Ann Street Decadent Brownies

Brownies
1 stick butter or margarine, melted
1/2 cup Mazola oil
6 tablespoons of cocoa
1 cup water
2 cups flour
2 cups sugar
1 teaspoon soda
1 teaspoon cinnamon
2 eggs
1/2 cup buttermilk

Frosting
5 tablespoons cocoa
6 tablespoons water
1 stick butter or margarine, softened
1 teaspoon vanilla
1 box powdered sugar
1 cup chopped nuts (optional)

Preheat oven to 350 degrees
Mix butter and oil; add cocoa and water
Mix dry ingredients and butter mixture, will be thick.
Stir until blended, add eggs and buttermilk and stir until smooth.
Pour into ungreased 9 X13-inch pan and bake for 30 minutes.
Last 5 minutes of baking, mix frosting ingredients together and spread on hot brownies once out of oven, sprinkle with nuts if you like.

Yield: 32 to 40 small squares.
