Real Men Eat Savory Pie (Bacon and Mushroom Quiche Recipe)

There’s just something about the word “quiche” that makes little boys turn up their noses and say, “Yuck.”

But tell those little boys instead that it is a scrumptious, savory pie, and you might just get a “thumbs up” and an empty plate in return.  The same goes for big boys, too. 

For several years, I’ve pulled out my favorite cookbook and whipped up a special spinach quiche on Christmas day that comes highly recommended by my friends Ross, Rachel, Monica, Chandler, Joey, and Phoebe.  

What, you mean they are your friends, too?

Well, then.  They don’t need any introductions, so let’s get right to the meat of the pie.

I ventured out this year, and in addition to the spinach pie, I made a Bacon and Mushroom Savory Pie.


The recipe is easy, but a little labor-intensive for people such as me who get a little stressed frying things.  Your efforts in the kitchen are worth it, though.  I promise you.

My family loved it.  My guests loved it.  I think this savory pie is now a Christmas day tradition.

Bacon and Mushroom Savory Pie (Quiche)

1 9-inch pie crust (I used Pillsbury, frozen)
6 strips of bacon
1 small onion, minced
6 ounces fresh white mushrooms, sliced thin
Salt and ground black pepper
3 large eggs
¾ cup milk (I used 2 percent)
½ cup of shredded cheddar cheese

Preheat oven to 400 degrees.  Prick the bottom of the crust with a fork.  Bake about 10 minutes. Remove crust from oven, and set it aside.  Lower oven temperature to 375 degrees.


Fry bacon. Transfer the bacon to a plate lined with paper towels and set aside. Pour off all but one tablespoon of the bacon drippings.  Add the onion to the pan and cook over medium heat until soft, about 5 minutes.  Add the mushrooms and cook until they are golden and considerably shrunken about 8 minutes.  Drain off any liquid in the pot.  Crumble the bacon and stir it into the pan.  Season with salt and pepper.


Whisk the eggs and milk together in a large bowl.  Stir in the mushroom-bacon mixture, and add the cheese.  Pour the entire mixture into your pie crust.  Place the pie on a baking sheet, and bake about 35 minutes.  Let the pie settle for at least 10 minutes before cutting. If you want you could add spinach, broccoli, or kale. You can change it up, but whatever you decide, I think you'll like it. 



I have had the Friends cookbooks since 1995. I have used it so much that the pages are worn out.

I cook many recipes out of the book, and it's hard to believe that I'm been cooking these recipes for so long. The burger recipe I use is from this cookbook. I have a few other regulars so I'll have to share those in 2020.

Let's Burn Some Butter

I think from Dec. 1 to the first day of 2012, I may have eaten six sticks of butter.

 Um, make that eight!


No, I didn’t actually eat butter straight from the fridge, but the butter went into a Japanese fruit pie, cookies, cakes, and other pies.  

All that butter is clinging to me now on my backside.  I feel as if I’m carrying a 12-layer chocolate cake on my right cheek, and 12 dozen peanut-butter balls on my left cheek.

Were all those Christmas calories worth it?

You bet your peanut butter balls, they were! Oh, and the two ladyfingers covered in powdered sugar were, too.  At one bite, that scrumptious Christmas cookie took me back to my childhood and into my Grandma Powell’s kitchen.  It’s amazing how one bite of a good cookie can release a flood of happy memories.


I told my husband as I licked the powdered sugar off my lips,  “I’ve got to embrace my inner grandma and find a signature dish that my kids will look forward to having when they come home for the holidays.”

He assured me that I didn’t have to rush because I still have 12 years before our son goes off to college. 

That’s good news because I was not successful tapping into my inner grandma this year at all.  I was a complete baking failure.  My Japanese fruit pie was not a hit with the kids one bit.  My husband doesn’t care for coconut, and, well, my mom, who was our guest, can’t eat nuts.

So, guess who ate it?

Yeah, it was me.  That particular pie had only one stick of butter.  The other seven sticks of butter were in other items made by wonderful bakers.

So what’s up with all this talk about butter?  

Well, I’m going to burn some butter, baby!   



That’s right. I want to get back into my diet and fitness routine for 2012.  When I lost 43 pounds after the birth of my daughter, I exercised a lot.  My clothes fit well, and I felt well. I had energy, and it also stabilized my moods.  I also have a hearty appetite, so exercise is key to maintaining my weight and boosting my metabolism, especially after the age of 40.

However, something unthinkable happened last year.  I started my blog in January 2011, and my morning exercise routine was quickly replaced with a few morning tweets and a lot of sitting at a computer. 


If I don’t exercise as soon as my feet hit the floor in the morning, then it is likely that I will not exercise at all.  My hearty eating habits didn’t change, so it’s not surprising that I ended 2011 five pounds heavier than when I started the year.  Oops! Weighed today.  Make that six pounds heavier than last January.

My goal for 2012 is to lose my blogging pounds.  You can become a fitness pal with me on my blog’s Facebook page if you want to help me with my journey.  My goal is to exercise at least five times a week.  If you have some fitness goals this year, then perhaps we can motivate each other to keep us moving.  I figured that if I publicly wrote my goal, then I would stay motivated to make it happen.

How Santa Saved My Marriage

That’s not really a true statement.  My marriage didn’t need saving, but Christmas 2011 shaped up to be one of my favorites thanks to my Santa listening to me this year.

That is true!  We've had a fun, special Christmas. 

Santa got us "his and her" smartphones.  Bye, Bye, old flipphone.

My husband and I are acting like newlyweds sitting on our couch late at night looking at our phones.

I look at luxury hotel websites, and he downloads apps.   Occasionally, we get so excited that we kiss.  It’s pure bliss.

Even though I was the one who really wanted the phone and told him so for about six months prior to Christmas, I think my husband is loving the gift just as much as me.

And as I type this post, he’s clicking away on his little phone. 

Santa also left me two sexy bras, and a pair of tall black UGG boots.  He also left my husband a plush robe, and sexy pajama pants.

With these types of gifts, how could I not say Santa saved my marriage?

We spent New Year's day getting ornaments off our tree.  Too bad there is not an app for that!

Did I even Raise my Children this Year with all that Blogging? by Leigh Powell Hines

It's time to say goodbye to 2011. I’m also ending my freshman year as a first-time blogger. As I go through my 2011 portfolio, I cannot believe I wrote 187 blog posts. The HinesSightBlog will be one year old in a few days, and it seems like it was so long ago that I wrote my very first blog post after a daunting trip to Food Lion with my two children.





There are a couple of things I need to tell you that have changed since that first post. I do like to write to reduce stress, but I have found that I enjoy writing for your comments even more. I love to hear from you, so I guess my writing, "I don't care if I'm the only reader," really doesn't hold true one year later.

Just like a TV show pilot, some of my earlier posts make me cringe. Just like fine wine, I think my posts have improved over time. I’ve become more comfortable in my space, and the posts seem more entertaining and enjoyable. 

Through blogging, II'vealso made some great connections and some great friendships. I know that may sound unusual to people who prefer making friends the old-fashioned way and not through social media. But it's a fact. I feel blessed to have met so many other bloggers and nonbloggers who read my blog. To you, I say thank you. You keep me motivated to continue this quest.  nd to think, one year ago I didn't tweet or own a smartphone. Santa made sure I was mobile in 2012.

I decided to take some time to look back over some old posts and pick some of my favorites.

Moving on to Birthday Candles

I hope you had a wonderful Christmas.  Our holiday has been picture perfect, and a lot of fun for my children.

We still have our tree up in our family room, but now we're getting out the birthday candles. That is, if we can find them among the after-Christmas clutter.  

My birthday is today, and my son will be six at the end of the week.  I used to dislike having my birthday so close to Christmas, but after many, many years, I've come to realize that it's a special time of year to celebrate a birthday.  Everyone is usually relaxed and still a little merry.  Also, you can buy whatever you didn't get under the tree for Christmas.  It's not so bad after all.

Baby Diva learned to sing "Happy Birthday!"for her preschool Christmas performance.   She nor my son will be winning X-Factor anytime soon, but they gave us an impromptu performance on Christmas before bed.  We are still the proud parents nonetheless.  And I bet that the sweet little kiss on the cheek was purely for the camera.  You be the judge.


So in-between taking down the Christmas tree, and eating a bite of birthday cake this week, I wish you a happy new year.
