Reunion Food: Southern Baked Beans with a Twist

Easy Baked Bean Recipe for Summer Get-togethers and BBQs.

I've always liked baked beans, but it a dish I rarely make at home. This year, I was assigned this side dish for our annual "Christmas in June" reunion with Will's family.  Sure, you can make baked beans from scratch and I'm sure they would be so good, however, that involves drying out navy beans overnight.  That just seems like a major kitchen project, not a side dish.

I did not want to show up with just canned baked beans though that I bought from Trader Joes.  I went through all of my cookbooks after purchasing the beans and found several variations online. I ended up adapting a recipe from Rachel Ray because I had the ingredients already in my kitchen, but after reading the recipe again this morning, I realized I left out two of her ingredients and started with a different type of bean. I've linked her original recipe, but here is my new Southern version.

Southern Reunions: Serving up Baked Beans

Southern Baked Beans with aTwist

4 cans of Traders Joes Organic Baked Beans
3 strips of uncured bacon cut into pieces
1/2 red onion, chopped
1/4 cup of brown sugar
1 tablespoon of vinegar-based BBQ sauce.
Bake at 400 degrees for 30 to 40 minutes. Stir and serve.

When we all sat down to eat, none of my children got baked beans, our cousin did who is in the 3rd grade. She said, "I did because I knew they were from a can."

I hope she liked my doctored up version to make it not seem like it came from a can.
