The countdown is on for Christmas.This will be our last #IGTRAVELThursday until after the holidays so I wanted to end this week with you saying, "AWWWW!"  I have four photos to share this week that I think you will like.

I fell in love with this photo from @FairmontHotels. This is the lovely lobby of Fairmont Le Château Montebello in Quebec, CanadaIt looks so cozy.

Four Seasons Hotel Vancouver got my attention with this cute mug immediately. They really got my love when they said it was an eggnog cocktail. I love eggnog. They shared the recipe with @foodandwinemag for #FWCookbook.

4 SERVINGS Ingredients: 4 large organic free run eggs 4 oz organic liquor cane sugar 1 tsp of nutmeg 12 oz of organic whole milk 8 oz of organic heavy cream 8 oz of spiced bourbon, to spice the bourbon empty one bottle of good bourbon to a large mason jar. Add one, split, vanilla pod, one cinnamon stick and twenty or so allspice berries. Close lid tightly, shake, and rest for a minimum of twenty four hours in the fridge. Strain the bourbon back to its bottle and keep chilled until ready for use. Method: 1. Measure all the ingredients and have each item chilled and ready to use before beginning this recipe! 2. Crack the egg into a large blender. 3. Place lid on with the centre removed. 4. Turn on to lowest speed. Allow the egg to incorporate for about thirty seconds. 5. Slowly add the sugar, follow with the bourbon adding a couple ounces at a time. 6. Follow up with the whole milk by poring it slowly into the mixture and finish with the heavy cream. 7. Once all these ingredients are in, continue to blend for about thirty seconds and slightly increase the speed, be careful to not over flow the mixture. 8. Once finished, pour the liquid contents into chilled glasses of your choice and dust with some finely grated nutmeg. For best results allow the egg Nog to rest in the fridge for at least an hour. 9. Serves four large glasses.

Can you say Merry Christmas to me now that I can make this for the holidays. But, mine won't be as cute because I don't have a mug like this. I love the Four Seasons Vancouver, and was a guest in April 2005, a few weeks before I found out I was pregnant with my first child. Happy memories!

The Umstead Hotel and Spa in Cary, North Carolina exudes luxury and class. I celebrated the holidays with two foodie blogging friends this week because neither of them had been to the hotel for tea, and I had not been for tea there in many years. Ron of FoodilicioiusFollies and Kristen, a food blogger for Visit Raleigh, and owner of her own blog, Gadabout Food, keep readers up to to date on Triangle food happenings. From food trucks to the latest restaurant news, they have the Triangle covered. Read more about our tea experience on the Visit Raleigh blog. I'm typically a scone lover, but for this tea, I was all about the tea sandwiches and the French Macarons.Top-notch. Tea is served Wednesday through Sunday in the hotel lobby. My friends were nice enough to give me the couch with the view of the Christmas tree, which was the perfect spot for this IG photo.

Oh, I'm in love with this face. This is Stanley, and he is the new canine greeter for the Fairmont Jasper Park Lodge in Alberta, Canada.  He will welcome Fairmont guests to the Canadian Rockies.  Let's all say it together, "AWWWWW!"

This week, I watched the cheesy "William and Kate" movie on Lifetime which I will probably one day regret revealing.  My mother-in-law suggested that I watch it in preparation for our royal wedding viewing.   It was interesting, and probably a lot more fiction than fact.  This tidbit may shock you as much as I have talked about the royal wedding this month on my blog, but I must have been preoccupied with my own life this century and just "wasn't in the know" a lot about Will's romance with Kate Middleton.   You see, my subscriptions to Majesty Magazine ran out last century, and after Princess Diana's death, I no longer kept up with the royals comings and goings.   In fact, I didn't even watch Charles and Camilla's wedding, but I was on vacation in British Columbia so that may not have been the case if I had been at home.   Nonetheless, I knew very little about their romance except seeing a few snapshots and reading a few headlines.  Of course, their engagement pulled me right back in to the royal hoopla I so loved in my teens and college.  I will be one of the crazy billion of people who will wake up at 4 a.m. this week to see all the events unfold live in London.

After seeing the royal movie Monday night, I found myself wanting to learn more about the lovely town of St. Andrews, Scotland where the couple studied together at the University.  If you love castles, ruins, and golf then I think you would love St. Andrew's Fife. As usual, I have looked at the hotels in the town, and if I were packing my bags today I would choose to stay at the Fairmont St. Andrews.  It just so happens that this hotel was the site of the charity fashion show where Prince William saw Kate Middleton in a new romantic light as she walked the runway in that now famous see-through dress.  The hotel also says that Prince William was a regular visitor of the spa during his time at the University.

This is a great destination to watch the royal nuptials on Friday.  The Fairmont thinks so, too.  They have a royal wedding weekend package where you watch the wedding on a big screen, and dine in the very same room where the fashion show was held.  You also get to check out the spa with a one hour treatment.  I think I would much rather be here than on the busy streets of London.

But since I'm announcing this package with just two days until the wedding, you may want to think about following package instead if you travel to Scotland between now and the end of the year.  It's called, "Spend the Kid's Inheritance".   I love the name!  This package includes overnight accommodations, full Scottish Breakfast, and 25 percent off spa treatments and green fees.  The Fairmont St. Andrews wants you to have the time of your life spending your kid's inheritance and enjoy maximum freedom during your retirement.

This is going to be my motto for the future.  Not that I'm rushing things, but I'll be approaching 60 by the time my youngest goes to college and I will be ready to travel, and do some of the things I can't do right now with the little ones.  However, I know my hubby will remind me that we have to pay college in our sixties.  Ouch!

Pack Your Bags: We’re Heading to a Fairmont Resort

It’s been a week since I started my Hines-Sight Blog. It’s been a great week because I’ve heard from some of you, and I thank you for your kind words and support. It really brightens my day. Being a mom is my first job and my priority, but I cannot tell you how much reward and satisfaction I have experienced in one week since seeking this creative outlet. I rise a little earlier with pep in my step, and I can’t wait to sit down and communicate with you. My turning 42 last month is no longer a dark cloud over my head; instead, I have renewed energy and excitement much like a recharged battery. This is something that a stay-at-home mom needs from time to time.

We’re going to celebrate my Hines-Sight Blog’s first week birthday by talking about one of my passions: Luxury Hotels. I am one of those people who say a hotel is not just a place to sleep so I relish my hotel search when I’m planning any type of vacation. I spend countless hours looking up hotel websites, and have a drawer full of hotel club memberships. Even my five-year-old son has picked up on my little quirk. When someone asked him what he was looking forward to on a recent trip to Walt Disney World this year, he remarked in his little southern accent, “Staying in a hotel and eating in restaurants!” I must also interject with sadness though that since taking on motherhood that my luxury vacation planning has come to a screeching halt! So you can imagine how much joy I’m getting by taking a few minutes to write about a hotel today. My ultimate goal is to have us “escape” to a resort from time to time so we’re going to start today by talking about Fairmont Hotels and Resorts.


The luxury hotel chain announced this month that their restaurants are going to cater to the special dietary needs of its guests. All Fairmont hotels and resorts now offer Lifestyle Cuisine Plus, a new menu available upon request catering to guests with specific diet-dependent conditions such as diabetes, heart disease, and gluten free, as well as unique dietary preferences including, macrobiotic, raw, and vegan diets.

We are fortunate in my family that we do not have any food allergies, but we do try to eat healthy. Since becoming a mother, I’ve become more aware of food allergies because I have friends who have children who have gluten, dairy, peanut, and egg allergies. I know the struggles they have to expose their children to meals that are safe. Dining out can be a huge challenge so imagine going on vacation where you need to eat in a restaurant almost daily! With Fairmont’s news and resorts all over the world, vacationing for these families just got easier.

I’ve only stayed in a Fairmont resort a couple of times in my life, but I frequented their resort restaurants several times while in British Columbia. The food was wonderful. I still talk about some of those meals today when I start reminiscing about trips. For fun,

I’ll post a photo of one of the best high teas I’ve experienced at the Fairmont Empress in Victoria, BC. We came home with great memories, and just three weeks later after that trip, we learned that the next time we went to a Fairmont Resort, we would be bringing along a stroller.
