Easy Irish Potato Soup that will Please Little Leprechauns for a Quick Weeknight Meal

I have very fond memories of a trip I took to Ennis, Ireland in 1998 with my college roommate. We stayed at the Old Ground Hotel in Ennis and toured the area for a week. It was an alumni trip with UNC-Chapel Hill and it was spectacular. This getaway was way before social media and cell phone photography. My photos are in an album stored away.

After a quick web update almost thirty-one years later, The hotel still welcomes guests in this Irish town, looks totally refurbished and I would stay there in a heartbeat again. This little town was perfect in every way. It was walkable. It was small. The entire experience was probably one of the best trips I've taken on a tour.

The Old Ground Hotel is located about 20 minutes away from Shannon International Airport and 40 minutes away from the Cliffs of Moher. I also dined at Durty Nelly's, a four-hundred-year-old pub in Bunratty, adjacent to the castle and I had some of the best carrot soup I think I've ever tasted.

We traveled to County Clare in October, and it was quite cold. I still remember the wonderful soups I had on this trip. I've always been a fan of potato soup so I started making it some upon my return.

I adapted a recipe published in Southern Living in 1999.

Easy Irish Potato Soup

1/2 cup unsalted butter.
3 leeks, sliced ( I used frozen from Trader Joes, and I didn't know the amount that three leeks would produce so I used almost two cups of frozen.  I may have used too much, but we liked the soup.)
5 large baking potatoes, peeled and cut into 1/4-inch thick slices. (I think my potatoes were on the smaller side so if you have smaller baking potatoes, I would recommend adding one or two more potatoes.  The original recipe called for only three).
3 (14 1/2 ounces) cans of chicken broth
1 teaspoon of kosher salt
1/4 teaspoon pepper

Toppings: shredded cheddar, crumbled cooked bacon (I used no nitrates added turkey bacon), chopped fresh chives.

Melt butter in a large saucepan over low heat; stir in onion and leek.  Cover and cook 20 minutes.  Stir in potatoes; cover and cook 15 minutes.  Stir in broth, salt, and pepper; bring to a boil.  Reduce heat, and simmer 30 minutes or until potatoes are tender.  Remove from heat, and cool slightly.

The original recipe says to put the soup in batches in the blender.  Instead, I took a mixer and pureed the soup in the pot.  My suggestion is to let the soup cool though.  I got a little splatter from a very hot potato! Reheat the soup over medium heat until heated.  Serve with desired toppings.

*Budget Note:  The soup cost less than $10 to make, and that includes all the toppings.  You will have enough for several meals.

I made this soup decades before an Instant pot, but this recipe can easily be adapted for the Instant Pot.  Other recipes I've read online also use red potatoes instead of baking potatoes.

A Detox Soup for Cold Winter Days: Cabbage and Tomatoes Fat-Burning Soup

This is an older soup recipe that I published on the blog in 2014, but I felt it was time for a reboot, especially after coming off travels where I dined out many days in a row. I had delicious food recently while in Roanoke, Virginia, but I did not stick to the lower-carb diet that I've been committed to lately. I

I plan to make my version of this fat-burning soup as soon as I buy some cabbage and tomatoes at the store.  It will be perfect for lunches at home this week, especially since we are in a frigid temperature deep freeze in North Carolina. This cabbage soup recipe has been around a long time for weight loss, but I think it's just divine as a soup, and if you want a really good meal then add ground beef to it.  It's still low-carb and delicious.  

I've yet to find the time to give you an update on 20-pound weight loss journey and how I did it. I promise it is coming soon, but I need to have uninterrupted time to write.  Time has been a precious commodity lately.

This cabbage and tomato based soup is good because it's packed with so many wonderful veggies. Cabbage is such a low-cost item in the produce section as well. You can use fresh tomatoes or canned tomatoes. Of course, in the winter months, canned tomatoes will be more cost-effective.

This soup is part of a rigid medical diet that you can follow for weight loss or you can just enjoy the soup like I do, but it does give your body a good detox.  The first time I ever made the soup, it banished water retention and I lost four pounds. That's great for coming off several days of eating restaurant food, but I do not think the seven-day diet is healthy. It was designed as a quick weight loss plan for overweight heart patients before surgery.   




Fat-Burning Soup with Shitake Mushrooms

I will more than likely make this soup in my Instant Pot this time.  I will also use bone broth, red pepper flakes and perhaps even toss in red cabbage. You can make this soup your own. Carrots could work, too, but they are a little higher in carbs so I think it depends on your purpose in making the soup. Right now, I just want to keep warm and get lots of vegetables.



Green Onions in Fat-Burning Soup


Basic Fat-Burning Soup with Cabbage and Tomatoes. 
(my version)

6 large green onions
2 large cans of tomatoes
1 large head of cabbage, chopped
1 bunch of celery
shitake mushrooms for flavoring
1 hot pepper
2 cloves of chopped garlic
1/4 inch of Kombu seaweed
Vegetable Broth or Bone Broth. I used organic
Spices for flavoring: Your choice. I used a red pepper sauce, thyme, oregano, etc. 

Saute veggies in olive oil. Add tomatoes. Cover with a combination of broth and water.  Boil for ten minutes. Season it with items of your choice.

7 Delicious Soup Recipes for any Night of the Week

As soon as the temperature drops, I love to read soup recipes and put a pot of soup on the stove. In North Carolina, official soup weather begins late October through the winter months. This is when you will start seeing more soups offered in Triangle restaurants. I think many of our Raleigh area restaurants offer delicious soups in season. Each year, local Raleigh chefs get souped up and serve some of their favorite soup recipes for charity.

When I dine in Raleigh restaurants, I like to order a lot of creamy based soups such as butternut squash, carrot, potato, tomato, coconut curry, and even beet soup. Will jokes that anytime there is a butternut squash, carrot, tomato, or a beet soup listed at a local restaurant, he knows I will order it. The soup can be in a pub, deli or high-end restaurant and I order it almost every time.

The main reason I order that type of creamy-based soup out a lot is that I'm too lazy at home to make something pureed and creamy smooth.  I do not own a hand blender and I think that is an essential chef's item for rich, creamy soups. One fall, I was dining at our local five-star hotel property when I was on assignment for a Forbes piece at the Umstead Hotel's Bar and Lounge for lunch, and butternut squash soup was on the menu. I loved it so much I ordered a second bowl. Who does that when the soup is $9 a bowl? It was worth it to me at the time. I had to have more.

I still talk about a carrot soup I ordered at a pub in Ireland in 1998. No doubt, I like it when a professional chef makes a soup.

In my own home, I tend to make more stews and chilis. The soup that I make most often is a vegetable beef soup that is a combination recipe that I put together from both of side of my grandparents. It's my absolute favorite soup and I could live off of it during the winter months.

Once again, I am honored to be a local judge for Urban Ministries of Wake County Stone Soup Supper Event. This charity event is a highlight of the fall season for me.  Proceeds raised from this event support programs that feed, shelter and provide health care for Wake County residents. It is a fun night in Raleigh, and I love to taste the chef's creations. I also enjoy learning more about Raleigh each chef and the styles they tend to favor in their cuisine.
